Whole cloves are dried flower buds with a deep brown colour and an intense warm aroma, adding concentrated spice with gentle floral sweetness to slow-cooked dishes, rice, pickles, baked recipes and hot drinks.
- Grinding a small quantity with cumin, coriander, cinnamon and black pepper for ras el hanout, then using the blend to season mrouzia and slow-cooked lamb with raisins and honey
- Adding a few whole cloves to rice as it cooks with cinnamon, cardamom and bay leaf, then removing them before serving
- Simmering whole cloves in vinegar with peppercorns, cinnamon and bay leaf when preparing pickled vegetables or fruit
- Infusing a few cloves with black tea, cinnamon, ginger or orange peel for a warming drink, then straining before serving
- Grinding a small amount into spice cakes, biscuits or fruit desserts alongside cinnamon, ginger and nutmeg
Add one or two whole cloves at the beginning of cooking so their aroma gradually infuses the dish, remove them before serving, or grind only the quantity needed and use it sparingly in spice blends and baked recipes because the flavour develops quickly.
Cloves contain manganese and fibre together with naturally occurring aromatic compounds that have shown antioxidant and antimicrobial activity in laboratory research, while the World Health Organization and European Medicines Agency document their traditional use in oral care and for temporary toothache relief.
