Description

Olive oil with garlic brings the savoury aroma and familiar flavour of garlic into an oil suited to both cooking and finishing. The garlic flavour is carried evenly through the oil, so it blends naturally into marinades, dressings and sauces. Whisk it with lemon juice, vinegar and herbs for a salad dressing, brush it over fish or chicken before grilling, or toss it with potatoes, courgettes, green beans and mushrooms before roasting. It also works well with pasta, tomato sauces, warm bread and soups. For chermoula, combine it with coriander, parsley, cumin, paprika and lemon, then use the mixture for fish, vegetables or a tagine. It can also be spooned over potatoes prepared with chermoula or used to finish a bowl of bissara. Use it during cooking to season the whole dish, or add it shortly before serving when you want the garlic aroma to remain more noticeable.
